Quick and Easy Lunch:
I tend not to be great with breakfasts, often opting for a shake rather than solid food, so this is one of my fav quick and light lunches that packs a punch nutritionally.
2 Poached Eggs
2 Grilled slices of smoked bacon
on a bed of spinach leaves, baby plum tomatoes, sliced avocado with a dressing of balsamic vinegar,olive oil, Himalayan sea salt and pepper
