Tomato Basil Chicken on bowties with roasted zuchinni on the side ***from Cambell's 1-2-3 Dinner pg. 23*** -1tbsp cocnut oil
-4 skinless, boneless chicken breast
-1 can Campbell's tomato soup
-2 tbsp Parmesan cheese
-1/2tsp dried basil
-1/4tsp garlic powder, or 2 cloves minced
-4 cups noodles of choice. - 2 Zuchinni, thinly sliced
- olive oil
- salt and pepper to taste
➡ Pre-heat oven to 400
➡ Heat oil in pan and pan sear chicken until done
➡ Put Zuchinni on a lined sheet pan (easy clean up) and sprinkle with oil, turn over and rpt on dry side. Sprinkle with salt and pepper. Put in oven for 15-20 minutes, until golden. In the mean time, continue....
➡ Place next 5 ingredients (soup,milk,cheese,basil,garlic) in sauce pan and heat through to simmer, stir consistently, DO NOT BOIL. Boiling can burn the milk and soup to the bottom of pan, causing yucky mess lol!
➡ cook pasta of choice according to package. 🍝Serve sauce over chicken or noodles or both with zuchinni on the side🍝

Sun Dried Tomato Pesto on noodles or zoodles: - 1c sun-dried tomatoes in Italian seasoned oil
- 1/4c parmesan cheese
- 1 garlic clove
- 1/4c dried basil, or 3/4c fresh
- 1/4tsp salt
- 1/4tsp onion powder
- 1tbsp oil from tomatoes
- optional red pepper flakes ➡Take tomatoes out of oilcand place in boiling water for 20-30 minutes, to rehydrate some.
➡Add dry ingredients to food processor and pulse smooth
➡add oil, pulse ➡Drain tomatoes, set water aside
➡Add tomatoes to food processor and pulse smooth
➡graudally add in leftover water to attain the desired consistency of sauce. ➡ OPTIONAL: add 1/8tsp red pepper flakes for a little kick.
🍝Serve over noodles or zoodles. Can also be made as a dip for veggies🍝
