• Pumpkin Pie Chia Pudding •
I knoooow I know pumpkin season is in autumn but I just love the variety and different usinf possibilities of pumpkins so I decided it was time for a new pumpkin recipe again 🤗
imagine the taste of a pumpkin pie for breakfast - vegan, glutenfree and refined sugarfree😍
Totally easy to prepare the evening before so you don‘t have to take much time in the morning.
for 4 portions you need:
• 1 1/2 cups coconut drink unsweetened (every plantbased milk works)
• 3/4 cup pumpkin purree
• 1 tsp vanilla extract
• 2-3 tbsp agave syrup (to taste)
• 1/2 tsp cinnamon • spices like speculoos, gingerbread or pumpkin spice
• 1/4 cup chia seeds
At first mix together the milk, pumpkin purree, agave syrup and the spices.
Then add the chia seeds and stir until well combined.
Let chill in an airtight container for minimum 4 hours. I did over night.
In the next morning just stir a bit.
I topped it with some vanilla coconut yogurt and some granola. (my selfmade Sweetpotato granola - see some posts ago)
This recipe makes 4 portions.

So remember when I said this week has been crazy? #storytime ... so I wanted pumpkin pie, cause like why not? And pumpkin pie doesn’t need a top crust duh so I halved the crust recipe. Except. I forgot to half the butter 🤦🏻♀️ #mathmajor#whatevs#mombrain (obviously I didn’t not realize until later...) So maybe 15 minutes into baking, my pie crust is sizzling like a deep fried who knows what... 🤔 that can’t be right... Oh. It gets better. My deep fried, sizzling, belated-thanksgiving pie starts spilling butter over the sides and the butter is BURNING. So. Much. Smoke. 😰 Like please don’t burn my house down. I am so determined to let this pie finish baking. I just want to eat this pie before I die...
Well, the house didn’t burn down. But it smelled so bad. I tried to air it out but there’s only so much cold winter air a Southern California girl can take. Next day, still stinky and all up in my purple couch that I love with all my heart. (I know it looks kinda brown in the pic, but it’s purple) Spritz that guy with some purify and water, good as new!
Oh, I almost forgot the most important part! Yes, the pie finally finished baking. And the crust turned out. so. flaky. 🤤 so yeah, #worthit

PUMPKIN COCONUT CAKE WITH SALTED CARAMEL CREAM CHEESE ICING • • •
As many of you know, I hate baking. I’m not one to “measure” anything. It’s two turns of the pan for this and a half a palmful of that. Well, I wrote this recipe to challenge myself. After a few adjustments, I’m positive that I nailed it! And a HUGE Thank-you to my sister @caitthompson2822 for testing this recipe and for the feedback!
I debated all day about posting this comparison. I have struggled with various negative thoughts surrounding this comparison and felt that maybe I could help myself and someone else at the same time by sharing them anyway. .
I decided in November to commit to running a half marathon. I chose a race in March to give myself some time to train the smart way. The holidays were coming and I knew where my temptations lie. #PumpkinPie#ShortbreadCookies#BirthdayCake I kept with my 80/20 lifestyle without a hitch until mid to end of December. Birthdays. Dinners out. Beer. Wine. More beer. More wine. I took almost 2 weeks off of running because of weather and did not make up for it by continuing to workout. I got lazy. I took one look at myself in the mirror in between Christmas and New Years and said, “Gurl!! You seriously gone wreck all your hard work thus far and miss another goal??!” .
The answer came to me from a small voice deep within my heart. “No.” I’m not going to settle right now and ruin my training plan. I’m not going to crawl under a rock and wave goodbye to my health again. I looked right at my reflection and told myself that I deserved better than what I have allowed myself to currently become. I have goals and I shouted them out loud for accountability. I WILL NOT LET MYSELF DOWN.
I started running regularly again (weather permitting) and began working out consistently in my own home. I have moments where I want to cave and give in, I’m human. I continually have to remind myself about my goals and stay laser focused on not cheating until it’s my cheat meal! #Discipline

Believing in yourself is hard sometimes. But if you don’t, who will? It begins and ends with you. My story is still being written and sometimes revisions are necessary. Road blocks are down and it’s full speed ahead. .
