Tofu and roasted veg burger at the Wild Carrot restaurant in the Four Seasons hotel in Hampshire😍 This wasn't on the menu but I asked them to make a vegan version instead of the burger on the menu and it was delicioussss! Today wasn't particularly difficult, but it sure feels like I burned through a lot of energy. Refueling with an easy bowl of ramen from @lotusfoods that I paired with @hodosoy 5 spice tofu puffs, radish, broccoli, and a drizzle of @soomfoods tahini (pretty much my 3 favorite products right now). Threw this over some baby spinach and that's what I call a satisfying meal for sure. To make the ramen noodles extra yummy I drained the cooking water and tossed the noodles with a pinch of the seasoning packet, a dash of soy sauce (about 1 tsp), and some fresh minced basil. The basil flavor was absolutely fantastic! 👩🏽🍳
Just a little bit more for me to do this evening before I call it quits for the night. Much more manageable to accomplish considering my belly is happy. 😁

ayyy it’s sunday which you know what it means 🤔 time to actually make “fancy-ish” meals and take quality pics!!! this bowl was the result 😋 jasmine rice + SRIRACHA MAPLE TOFU 🔥 + edamame + avocado (topped with @traderjoes everything but the bagel seasoning) + spinach. ⚡️⚡️⚡️ ➡️ tofu was simply marinated in a sht ton of sriracha + some maple syrup + liquid aminos + garlic powder. heat an oiled pan to medium high heat, sauté some chopped ginger and add the tofu (&marinade) in and sear until golden!
LUNCH 🤤 smooth, creamy and crunchy all in one 👉🏼 sweet potato avocado sandwich with grilled sesame tofu. While I’m proud of this sandwich, I’m more proud that I was able to hold it in one hand while using the other to shakily take a photo 😏 happy new moon!!!
