I have mushrooms planned for lunch today and really fancy some basil pesto to go with them... I didn't have any pine nuts though, so improvised and used leftover salted peanuts from the weekend and it's absolutely flippin' delicious! 💚 * 1.5 cups fresh basil leaves
* 1 cup salted peanuts
* 1 tbsp olive oil
* 3 tbsp water
